3 cups of water
12 oregano leaves
¼ tsp of dried basil
¼ tsp of salt
½ lb of shrimp, peeled and deveined
pinch of salt
1 tsp of olive oil
½ cup of low-fat Swiss cheese
- In a medium sized saucepan, add the tomatoes, water, oregano, dried basil, and salt. Bring to a boil then allow to simmer for 5 minutes, covered, stirring occasionally.
- Stir the grits into the pot and cook for 10 minutes, covered, stirring frequently.
- Add a pinch of salt to the shrimp then saute using the olive oil for 2-3 minutes or until the shrimp becomes a light pink color.
- Pour the grits onto 4 plates, then top with shrimp, and cheese.
