Collard greens are a staple in any Southerner’s diet. But too often, these greens are made with fatty foods such as fatback and hamhocks. That’s a no no if you want to be healthy. This recipe makes a flavorful batch of healthy greens without all of the extra unhealthiness.
½ tsp of salt
1 tbs white sugar
1 tbs of apple cider vinegar
½ tsp of black pepper
⅛ tsp of smoked paprika
⅛ tsp of cayenne
⅛ tsp of parsley, dried
2 cups of water
- Combine all of the ingredients, except for the greens, in a large pot, stir.
- Add greens to the pot and heat on medium high heat until a boil. Maintain the pot on a low boil by turning temperature to medium low. Cover the pot.
- Cook for 45 minutes to 1 hour.
