1 small onion, chopped
3 garlic cloves, chopped
1 ½ pounds of okra, cut into ½ in rounds
4 tomatoes, peeled and chopped
½ tsp of black pepper
½ tsp of white pepper
1 tsp of hot sauce
pinch of dried thyme
pinch of dried basil
- Heat a sauce pan on medium heat. When hot, add the olive oil and saute the onion and garlic cloves.
- Add the okra, tomatoes, salt, black pepper, white pepper, hot sauce, thyme, and basil. Reduce the heat to low, cover, and simmer until the tomatoes and okra are soft, but not mushy, about 15 minutes or so, stirring once or twice.
- Serve over rice.
