Southern Vegetable Medley

This Southern Vegetable Medley is another perfect slow cooker meal. Add in collard greens, turnip green, and cabbage and you’ve got a healthy southern meal. Best of all, all of your favorite southern vegetables are in one dish!

Ingredients

Liquids

1 ½ cups unsweetened apple juice
1 ½ cups of water
2 tablespoons lemon juice
2 table spoons of apple cider vinegar

Leaves

1 lb of collard greens
¼ lb of turnip greens
¼ lb mustard greens
¼ of a head of cabbage

Directions

  1. Cut/tear the leaves in desired sizes or patterns. Make sure to make collard pieces small, however, to facilitate cooking because collards are the toughest of the vegetables being cooked.
  2. Place all of the vegetables in a 5 quart slow cooker (The vegetables begin to condense over time, so it is possible to use a slightly smaller slow cooker. It’ll just be a really tight fit initially.
  3. Add all of the ingredients for the liquid to the slow cooker.
  4. Cook on low for 7-9 hours or until desired tenderness.
