Southern Salad

This Southern salad might seem odd at first, but the flavors meld wonderfully. Turn it into an even more amazing brunch by topping it with two fried eggs. The egg yolk becomes a salad dressing on top.


½ head lettuce, finely shredded
2 tomatoes, chopped
½ cup of cooked black-eyed peas (seasoned with ¼ tsp of salt and ¼ tsp of black pepper, if you used dried beans)
½ cup of cooked turnip greens (seasoned with ¼ tsp of salt and ¼ tsp of black pepper)
1 avocado, cut into squares


  1. Prepare the peas and turnip greens, if they are not already prepared. This could take about an hour depending on the type of beans you use.
  2. In this order, add lettuce, tomatoes, black-eyed peas, greens, and avocado.
  3. Serve
