Savory Chicken N' Waffles

It’s not an exaggeration when I say that this may be the best chicken n’ waffles I ever had. It’s low sodium and the fats are mostly good fats, but the calorie count makes it something you should only eat on special occasions. Try these savory chicken n’ waffles! They are without a doubt the best chicken n’ waffles you’ll ever have.

Ingredients

Waffles

1 cup of 1% milk
1 tbs of balsamic vinegar
1 cup of flour
½ teaspoon baking powder
¼ teaspoon baking soda
1 tbs of sugar
1 carrot, chopped
¼ tsp of rosemary
⅛ tsp of cilantro
1 egg
2 tbs of olive oil
1 tbs of vegetable oil

Roasted Chicken

6 oz of chicken breast, skin on, cut into 2 pieces
juice of one lemon
¼ tsp of cayenne
¼ tsp of black pepper
⅛ tsp of salt
⅛ tsp of tarragon
pinch of cinnamon

Gravy

2 tbs of chicken drippings
½ tbs of flour
½ cup of 1% milk
¼ tsp of black pepper
⅛ tsp of garlic powder
pinch of salt

Directions

  1. Chicken: Preheat oven to 375F. Combine the cayenne, black pepper, salt, tarragon, and cinnamon in a bowl.
  2. Add the lemon juice to the chicken. Then add the seasonings to the chicken. Make sure to get under the skin and on top of the skin. Roast in oven for 25 minutes or until done.
  3. Waffles: Combine the milk and the balsamic vinegar. And set aside.
  4. Combine flour, baking powder, baking soda, sugar, carrots, rosemary, and cilantro.
  5. Beat the egg. Then beat the vegetable and olive oil into the egg. Mix in the milk mixture.
  6. Mix together the dry and wet ingredients. Follow the directions on your waffle iron.
  7. Gravy: Add 2 tbs of chicken drippings to a saucepan. Heat on medium. Whisk flour into the drippings and continue whisking for 2 minutes. Whisk in the milk. Heat until thickened, stirring frequently.
