Roasted Cherry Tomato Salad

This roasted cherry tomato salad is perfect as a side dish and as a main dish. The flavors are very diverse, but meld beautifully. It’s also low in calories and has mainly good fats. Did I mention it’s easy to make?


1 pint of cherry tomatoes, rinsed
1 tbs of honey
2 tbs of olive oil
1 garlic clove, finely chopped
1/8 tsp of salt
¼ tsp of black pepper
¼ cup of walnuts
1/8 cup of part skimmed ricotta cheese


  1. Preheat oven to 375F.
  2. In a small container, mince garlic with salt and black pepper. Combine mixture with honey and olive oil.
  3. In a medium sized bowl, coat the cherry tomatoes and walnuts with the olive oil mixture.
  4. Place the cherry tomato and walnut mixture on a roasting pan. Roast for 20 minutes.
  5. Remove from the oven. Add ricotta cheese pieces.
  6. Serve

*If elevated blood pressure is not a primary concern, you can add up to 1/2 additional tsp of salt to the recipe. This would make salt per serving 320mg.
