An easy, ready-by-the-time-you-get-home recipe. Make these rice and beans on days that you know will be tiring. It is perfect on busy days and can be cooked in the slow cooker all day. This healthy rice and beans recipe is full of nutrients!

1 cup of black eyed peas
3 garlic cloves, smashed
½ tsp of black pepper
¼ tsp of salt
1 tbs of vinegar
4 cups of water
2 cups of cooked brown rice
1 cup of lowfat cheese (optional)


  1. Combine all ingredients in slow cooker and turn to low.
  2. Cook for 7-9 hours, covered.
  3. Add beans over prepared rice and add cheese.
