Potato Broccoli Soup

This is one of my favorite soups. The Yukon potatoes make it creamy, while the broccoli adds texture. It’s very filling, so you won’t need much more than this. Yukon potatoes aren’t required, but they give the best result. Try this Potato Broccoli Soup today.

Ingredients

2 tbs of vegetable oil
3 leeks, chopped
3 garlic cloves, finely chopped
6 peeled, medium to large Yukon potatoes, about 2 pound
½ tsp of salt
½ tsp of black pepper
5 cups of water
1 cup of cooked broccoli, chopped

Directions

  1. In a large pot, sauté the leaks and garlic in the vegetable oil.
  2. Add the potatoes, salt, and pepper to the pot. Then add the water heat on a low boil for 30 to 40 minutes, or until easily broken with fork.
  3. Pour mixture into blender and blend until smooth. Because of the amount of potatoes and liquid, you may have to blend in two batches with equal amounts of potatoes and liquid in each batch.
  4. Pour soup into bowls. Add desired amount of broccoli to the top.

*If elevated blood pressure is not a primary concern, you can add up to 1/2 additional tsp of salt to the recipe. This would make salt per serving 822mg.
