This is the tastiest rice meal you’ll ever have. It’s more of an entree than a side, so anything you pair with it should be really simple. I combined it with pan-seared fish and boiled green beans. Baked chicken is also a really great choice. Pecan rice is definitely my favorite rice meal.
2 tbs of canola oil
1 sweet onion
4 garlic cloves
1 tbs of parsley leaves, dried
½ tsp of salt
½ tsp of black pepper
½ tsp of smoke paprika
½ tsp of chili powder
2 cups of brown rice
4 cups of water
½ cup of chopped pecans
- Place a large pot on medium high heat. Then sauté the onions, garlic and spices in the canola oil for 5 minutes.
- Stir the brown rice into the pot, coating it evenly with oil and onions. Then add the water to the pot and bring to a simmer or low boil. Cook for 40 minutes.
- Remove the pot from heat and let sit for 10 minutes. This is important, so that the rice doesn’t get mushy. If there is any liquid lift in the pot drain it out after this time is over.
- Toss the pecans into the rice. And serve.
