Healthy Fried Egg Sandwich

No lie. This is the best tasting breakfast sandwich ever. You have to get bakery bread for this to work. Try Harris Teeter or Walmart.

2 slices of good bakery bread (think Harris Teeter or Walmart bakery)
ΒΌ cup of favorite cheese, shredded or sliced
6 lettuce leaves
1 roma tomato, sliced
4 fried eggs


Directions for bread

  1. Preheat oven to 325 F. Add cheese to the bakery bread and toast for 4 minutes or until desired texture.
  2. Remove from oven. Add the lettuce and tomatoes. Then add 2 fried eggs to each slice of bread.

Directions for fried eggs

  1. Microwave water in medium sized bowl for 1 minute. Add the eggs to the water and let sit for 5 minutes.
  2. Preheat a frying pan on medium heat. Add vegetable oil.
  3. When hot, crack the eggs into the pan then immediately reduce heat the medium low. Cover the pan with lid and let cook for about 2 minutes.
  4. The eggs are done when the top of the eggs are no longer runny. (The inside of the yolk will still be a runny, if you do this right.)
  5. Add pinch of salt and black pepper.
