Goat Cheese Veggie Tacos

I’ve been in a real taco mood ever since I learned how to make flour tortillas. This is my new favorite recipe for veggie tacos. The goat cheese takes it to the next level. You can omit it, but you’ll be missing out. The fat in this recipe comes from the avocado, which is a healthy form of fat (unsaturated).

Ingredients

12 cherry tomatoes
8 tsps of goat cheese
ΒΌ of a small red onion, finely chopped
1 small avocado
1/8 cup of chopped cilantro
Juice of a lemon
Pinch of salt for each taco

Directions

  1. Warm the tortilla in a 200F oven for 5 minutes
  2. Add all of ingredients to the tortillas. Each tortilla should get 2 teaspoons of goat cheese.
  3. Serve
