Healthy Sandwich: Cucumber and Tomato Sandwich

This healthy sandwich proves that you don’t need meat on everything. Just slice up some veggies and you’ve got a quick, healthy sandwich for lunch. This healthy sandwich is extremely filling and very juicy.

4 slices of whole wheat bread
½ cucumber, peeled and sliced
1 slicing tomato, sliced
½ a cup of favorite reduced fat cheese


  1. Preheat the oven to 350℉. Place the bread on a baking sheet.
  2. Add half of the cheese to two of the slices of bread and place in the oven for 5 minutes or until toasted.
  3. Remove bread from oven and stack the tomatoes and cucumbers on the slices of bread without cheese.
  4. Add the slices of bread with cheese to the top of the sandwich.
