How to Cook Healthy Collard Greens

Collard greens are traditional southern. We typically slow boil the leaves for hours with bacon grease and ham hocks. And let’s not forget the salt. Lots and lots of salt. This is very, very, very unhealthy. And I find that it hides the flavor of the collards themselves. Instead, I like to boil them in water seasoned with black pepper, cayenne, salt, and vinegar. This leads to a fresh collard green taste.
