8 asparagus stalks, diced
3 celery stalks, diced
4 cloves of garlic, diced
1 bell pepper, diced
2 russet potatoes, diced
1 tbs of vegetable oil


  1. Heat a large skillet to medium high heat. Add vegetable oil to hot skillet.
  2. Add the celery and potatoes to the pan and sauté for 3 minutes.
  3. Add the asparagus, bell pepper, and garlic cloves and saute for another 4 minutes or until the potatoes are softened.
  4. Serve over ½ a cup of rice.
